Deviled Eggs

For some reason, I thought I didn’t like deviled eggs…that was until now!  I had ended up buying a dozen eggs, which I never do, and realized I needed to think of something to do with all of them.  After flipping through countless recipes, I decided the easiest thing would be to make a bunch of deviled eggs and just use them as my lunchtime snack for the week.

The recipe I found calls for four eggs, but you can really use whatever you have and just adjust the ingredients a bit to fit that number.  This is one of my new favorite Sunday lunch/dinner prep ideas!  Enjoy!

Serves 4

4 large eggs

2 tablespoons reduced-fat mayonnaise

1 teaspoon cider vinegar

1/2 teaspoon Dijon mustard

Pinch salt

Pinch black pepper

Chopped fresh flat-leaf parsley or paprika

  1. Place eggs and enough cold water to cover by at least 1 inch in medium saucepan; bring to boil.  Immediately remove saucepan from heat and cover.  Let stand 15 minutes.  Pour off water and rinse eggs under cold running water until cool.
  2. Peel eggs.  Cut eggs lengthwise in half and remove yolks.  Transfer yolks to small bowl and mash with fork until smooth.  Add mayonnaise, vinegar, mustard, salt, and pepper; stir until mixed well.
  3. Place egg whites on a plate.  Spoon yolk mixture evenly into egg white halves or spoon yolk mixture into pastry bag fitted with star tip and pipe into egg white halves.  Sprinkle with parsley or paprika and serve or loosely cover and refrigerate up to 4 hours.

Onion-Roasted Potatoes

Most weeks I try to have Sunday be the day where I wake up and cook for the entire week.  It works most of the time. 🙂

One of my favorite things to buy are petite potatoes.  I dice them up and they cook in no time and are the perfect thing to have in the fridge as a side with most dinners.

A delicious tip I got from one of my old co-workers, Beverlee, was to take advantage of those handy Lipton Onion Soup Mix packages!  Now, this is not something you probably want to do all the time since it adds a bit of unneccessary salt to everything, but it definitely is a nice treat every once in a while.

All I do is quickly chop the potatoes into small bite size pieces and throw into a bowl, toss with a little bit of extra virgin olive oil and pour out the soup package.  Mix it all up and pour out onto a cookie sheet and bake at 350 until you can pierce them with fork…roughly about 20 minutes.

One of my favorite treats to mix up my average dinner!

Delightful Brunch

I have never been much of a brunch person, simply because I love breakfast and I love lunch…no sense it trying to combine the two!  However, this past Sunday I met up with two of my girlfriends at a neighborhood spot called Ella’s.  This is a place I have walked past countless times and I even send my boss there for breakfast meetings, but have never really thought to go myself. I’ve since changed my mind and might even have to make this one of my new breakfast spots!  We got: Curried Potato Scramble, Chicken Hash, and Eggs w/ Toast.  If you live in or near San Francisco, go check it out!  Delicious!

Chicken Tikka Masala

Within the last year, I have become slightly obsessed with Indian food.  I think I would be happy if I could eat it at least once a week.  Often times during the week, I make Chicken Tikka Masala* from a delicious packet I found at Whole Foods, but lately I have been wanting to try something a little more homemade.  While browsing my friend Caitlin’s blog, I came across another fab site, called Eat Live Run.  For some reason, I have a strained relationship with my Crock-Pot…I have literally never made anything in it that I like.  That is until now!  People, I can’t tell how you excited I am about this amazing recipe I found because it is DELICIOUS!

I decided to keep it simple this time and just had rice to go along with it, but you can also roast broccoli or potatoes and toss on top or a side dish for a little something more which I like to do a lot if I have various veggies I need to use up.

This Chicken Tikka Masala recipe was easy and had great pictures to go along with it for the various steps.  If you’re looking for a delicious and easy slow cooker recipe this should be it!  Check it out here!

*Side note:  Thanks to my friend on G+, Luc (awesome photographer, so check his stuff out), I now have learned that Chicken Tikka Masala is not really authentic Indian food.  Who knew!?  I sure didn’t…  Take a look at the history of the dish here.

Beeswax Paper Stars

I had previously written about the tablescape (read about it here) my Aunt J & C had done for Christmas and the amazing paper stars that my Aunt R made!  They can be such a fun punch of color on an otherwise neutral table.  These are made from folding four strips of paper together and then dipped into beeswax to make them a bit sturdier…it also gives them a little gloss which is pretty!  Detailed pictures will be coming shortly on how to make these!  Until then, enjoy these pictures of various versions!
