I have never been much of a brunch person, simply because I love breakfast and I love lunch…no sense it trying to combine the two! However, this past Sunday I met up with two of my girlfriends at a neighborhood spot called Ella’s. This is a place I have walked past countless times and I even send my boss there for breakfast meetings, but have never really thought to go myself. I’ve since changed my mind and might even have to make this one of my new breakfast spots! We got: Curried Potato Scramble, Chicken Hash, and Eggs w/ Toast. This year, I decided that making Christmas breakfast would be my job. After flipping through countless recipes, I decided on a quiche-type dish that we like to call Texas Chili (although, I’m not entirely sure why). It’s a recipe we got from a family friend that she discovered while living in Texas. It makes a lot, so I decided to half it for today. Best wishes for a Merry Christmas today!
- 1 lbs. Monterey Jack Cheese
- 1lbs. Cheddar Cheese
- 6 Eggs
- 1 – 5oz. Can Evaporated Milk
- 3 – 4oz. Can Diced Green Chilis
- Dash of Cayenne Pepper
- Splash of Worcestershire Sauce
Mix all ingredients together and bake at 350 for 30 minutes or until slightly browned on top.
